marinade


Slightly sweet and packed with a rich, lingering umami, this marinade is highly versatile. I’ve used it in a ton of applications myself like for marinating zucchini or cod. Use it to add flavor to any of your favorite vegetables and protein, and play around with the marinating time (overnight is usually a good rule of thumb) to explore the possibilities!

Ingredients

200g white miso

80g sake

80g mirin

30g sugar

  • Weigh the sake and mirin into a sauce pot and bring to a boil.

  • Once the alcohol has been burned off, add the sugar and miso, stirring constantly until the sugar is completely dissolved.

  • Cool to room temperature and store in the fridge indefinitely.
