marinara sauce


This marinara sauce was inspired by Chef Paolo Lapriore in his feature on Italia Squisita. The trick here is to use a shark skin grater to get the garlic super fine and almost dissolving into the tomato sauce. Pair it with your favorite pasta and a side of simply cooked seasonal vegetables. Adding a steak or other protein on the side makes it a complete meal.

Ingredients

1 can San Marzano tomato sauce (whole, peeled)

4-5 garlic cloves, grated with a sharkskin grater

Olive oil

Salt

  • Sweat the grated garlic in a tablespoon of olive oil (ideally in a ceramic pot) until translucent over low heat. Stir constantly to avoid burning.

  • Add the tomato sauce a little at a time and season with a pinch of salt.

  • Cook over low heat, stirring from time to time until the sauce is concentrated, approximately 1 hr.
